
Chef Nick Alvis
British-born, Chef Nick Alvis brings over 29 years of culinary experience across the UK, Paris and the Middle East to his latest venture, The Beam - situated within Le Royal Meridien Beach Resort & Spa, Dubai.
Beginning his career in his home country, Chef Alvis worked in numerous country house hotels and pubs, building experience and learning the day-to day operations of running a kitchen. It was in 2001, that Alvis moved into the world of Michelin-starred restaurants in the UK's capital. Alvis worked in numerous restaurants owned by the legendary Gordon Ramsay, including the, then, one Michelin-starred Claridges restaurant. Alvis then ventured to Pétrus, learning and working under acclaimed Head Chef Marcus Wareing which held two Michelin-stars, and earnt one just seven months after opening.
In 2008, Chef Alvis went oversees to Paris, where he was part of the opening team that launched, Gordon's Trianon Palace outpost, located at the prestigious Waldorf Astoria in Versailles, gaining two Michelin-stars after just twelve months of opening.
Chef Alvis then made the move to the Middle East, to re-launch Verre by Gordon Ramsay, which then led to a partnership with Scott Price in 2011, where they launched their own Dubai-based F&B consultancy. The culinary duo opened multiple home-grown concepts across the city including their debut concept, Table 9 by Nick & Scott, a bespoke dining experience that became a largely recognised and award-winning venue in the UAE along with 50 Best recognition as one to watch. Following Table 9, in 2016 the chefs opened Folly by Nick and Scott, an intimate dining room with an open kitchen, alongside two outdoor terrace bars with a strong game in crafted cocktails.
Over the last decade of Chef Alvis' career he has crafted his skills in both culinary expertise and management, evidenced by the string of awards and accolades won. This includes Folly being recognised in ‘The Worlds 50 Best Discovery', a list that is internationally recognised as some of the globes most reputable restaurants. Similarly, with the introduction of the Michelin guide in Dubai in 2022, Chef Nick was awarded the Michelin Bib Gourmand alongside two hats from the newly launched Gault & Millau guide for his cooking.
Continuing to push boundaries within the local culinary sphere, Chef Alvis now owns and manages his consultancy, Kitchen Management Solutions (KMS), where he is committed to championing local talent and developing new, creative concepts that continue to position the UAE as one of the world's best cities for gastronomy.
In his spare time, Chef Alvis enjoys watching Arsenal, playing golf and fishing.
